  • 1 cup diced zucchini
  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 tbsp crumbled feta or goat cheese (optional)
  • 1 tsp olive oil
  • 1 slice of whole grain bread
  • ripe avocado
  • Everything bagel seasoning (or salt, pepper, chili flakes)
  • 1 cup sliced strawberries
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a cast-iron skillet over medium heat, sauté zucchini, onion, and red bell pepper for 3-4 minutes.
  3. Whisk together eggs with salt and pepper in a mixing bowl. Pour the egg mixture over the sautéed veggies and sprinkle with cheese if using.
  4. Bake for 12-15 minutes until set.
  5. While baking, toast a slice of whole grain bread and mash avocado in a small bowl; spread it on the toast.
  6. Serve one slice of frittata alongside the avocado toast topped with everything seasoning, accompanied by fresh strawberries and blueberries.
