  • 3/8 cup old-fashioned oats or chopped walnuts
  • 8 Tablespoons unsalted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • pinch fine sea salt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 1/3 cups confectioners' sugar
  • ground cinnamon (for sprinkling on top)
  • sliced fresh figs (for garnish)

Instructions

  1. Preheat the oven to 325°F. Line a standard muffin pan with 12 cupcake liners. Set aside.
  2. In a mixing bowl, combine all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cardamom, and fine sea salt.
  3. In another bowl, beat together eggs and granulated sugar until fluffy. Add extra virgin olive oil and sour cream to the egg mixture; mix until combined.
  4. Gradually incorporate dry ingredients into wet ingredients until just combined. Fold in chopped fresh figs, fig jam, and old-fashioned oats or chopped walnuts gently.
  5. Pour batter evenly into prepared cupcake liners. Bake in preheated oven for about 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow cooling completely before frosting.
