  • 2 lbs organic lamb rib chops
  • 6 garlic cloves, crushed or minced
  • 2 sprigs fresh thyme
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup premium pomegranate juice
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 cup premium pomegranate juice
  • 2 tablespoons unsalted butter
  • 1 tablespoon cornstarch
  • 3 tablespoons warm water

Instructions

  1. Marinate the lamb chops by mixing olive oil, garlic, thyme, salt, pepper, garlic powder, and parsley in a bowl. Rub this mixture over the chops and let them marinate for at least 15 minutes.
  2. Preheat your cast iron skillet over medium-high heat. Sear the lamb chops for about 5 minutes on each side until browned.
  3. Add ½ cup of pomegranate juice to the skillet and simmer for about 5 minutes to reduce slightly.
  4. Mix cornstarch with warm water until smooth; stir into the sauce until thickened.
  5. Remove from heat and stir in unsalted butter until melted.
  6. Serve hot with extra sauce drizzled on top.
