  • 2 lb vine tomatoes (chopped)
  • 1/2 cucumber (chopped)
  • 1 red pepper (chopped)
  • 1 shallot (finely chopped)
  • 2 cloves garlic (finely chopped)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Sea salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Prepare an ice bath and bring a pot of water to boil. Score the bottom of each tomato with an ‘X,’ then blanch them for 30 seconds before transferring them to the ice bath.
  2. Once cooled, peel the tomatoes and chop them into chunks.
  3. In a large bowl, combine the chopped tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, sea salt, and pepper. Let sit for at least 20 minutes.
  4. Transfer the mixture to a blender and blend until smooth.
  5. Chill in the refrigerator for at least 2 hours before serving.
  6. Serve in bowls garnished with fresh basil.
