  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350℉ and grease your baking pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix in the egg, vanilla extract, milk, vegetable oil, and hot coffee until smooth.
  3. In another bowl, melt butter and coat the kataifi dough with it.
  4. Pour half of the batter into the pan, add half of the kataifi mixture and pistachio cream; pour remaining batter on top followed by kataifi.
  5. Bake for 25-30 minutes until a toothpick comes out clean. Cool completely before adding ganache.
  6. For ganache: Heat cream until simmering; remove from heat and stir in chopped chocolate until smooth.
  7. Pour ganache over the cooled cake and let set before serving.
