  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Fresh cilantro for garnish
  • Diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for 15 minutes until softened. Drain and blend with chopped onion, garlic, and diced tomatoes until smooth.
  2. Place the beef chuck roast in a slow cooker and pour the chili mixture over it.
  3. Add beef broth, oregano, cumin, bay leaves, salt, and pepper to the crock pot. Stir gently to combine.
  4. Cook on low for 8-10 hours until the beef is tender.
  5. Shred the beef in the crock pot and mix it back into the sauce.
  6. In a frying pan, heat oil over medium heat and fry corn tortillas until crispy. Fill with shredded beef and garnish with cilantro and onions.
