  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup olive oil (or beef tallow, ghee, or avocado oil)
  • 1 whole head garlic
  • 1 tablespoon chopped fresh rosemary
  • Flaky sea salt for finishing

Instructions

  1. Preheat oven to 450°F with a large empty roasting pan inside.
  2. Rinse and boil potatoes in salted water with baking soda until fork-tender (about 25 minutes). Drain and dry.
  3. Heat olive oil in the preheated roasting pan. Rough up potato edges in a colander before adding them to the pan. Season with salt and pepper, then add the garlic head cut-side down.
  4. Roast for about 55-60 minutes, tossing every 20 minutes until golden brown.
  5. Combine roasted garlic cloves with rosemary and olive oil; toss with potatoes and return to the oven for an additional 5 minutes.
