  • 1 lb fresh, skinless salmon fillets
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha, adjust to taste
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Cut salmon into 1-inch cubes and pat dry.
  2. Set up a breading station with flour, beaten eggs, and panko mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each cube in flour, dip in eggs, then roll in the panko mixture.
  4. Heat vegetable oil in a large skillet over medium heat until hot.
  5. Fry salmon bites in batches for 2-3 minutes on each side until golden brown and crispy.
  6. For the bang bang sauce, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  7. Drizzle sauce over the fried bites before serving.
