  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta, cubed
  • Cajun seasoning
  • garlic powder
  • salt
  • pepper

Instructions

  1. Cook the rigatoni in salted water until al dente (10-12 minutes). Reserve ½ cup of pasta water before draining.
  2. Sear seasoned chicken in olive oil and butter in a skillet until golden-brown and cooked through (6-8 minutes). Remove from skillet.
  3. In the same skillet, melt butter, sauté minced garlic, then add heavy cream and milk, stirring until warm. Incorporate cream cheese until smooth.
  4. Add Parmesan, mozzarella, and Velveeta; mix until melted and thickened. Adjust consistency with reserved pasta water if necessary.
  5. Combine cooked rigatoni with sauce and return chicken to skillet or serve on top.
