  • 20 ounces refrigerated cheese tortellini
  • 1 pound ground beef
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups shredded cheese (Parmesan and mozzarella)
  • Seasonings: Cajun seasoning, Italian seasoning, smoked paprika

Instructions

  1. Boil salted water in a large pot. Cook tortellini according to package instructions (about 35 minutes). Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned (7-9 minutes). Drain excess fat.
  3. Stir in chopped onion; cook for 4-5 minutes until softened. Add minced garlic and spinach; cook for another few minutes.
  4. In a saucepan, melt butter over medium heat. Whisk in flour to form a roux; gradually add milk and chicken broth while whisking. Simmer until thickened (5-7 minutes).
  5. Lower heat; stir in heavy cream, cheeses, seasonings, salt and pepper until smooth.
  6. Fold cooked tortellini into the sauce along with the meat mixture. Serve hot.
