  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or half-and-half)
  • 5 oz fresh spinach (baby spinach)
  • 1/2 cup grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Instructions

  1. In a large pot of salted boiling water, cook the gnocchi according to package directions until they float (about 2–4 minutes). Drain and set aside.
  2. In a skillet or Dutch oven over medium heat, heat the olive oil and sauté the chopped onion until softened (5–7 minutes).
  3. Add minced garlic and tomato paste; cook for an additional minute.
  4. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for at least 15 minutes.
  5. Remove from heat, then add heavy cream and Parmesan until smooth.
  6. Incorporate spinach and stir until wilted (about 1–2 minutes).
  7. Add cooked gnocchi to the sauce and toss gently to coat.
  8. Serve hot with extra Parmesan garnishing if desired.
