2 large eggs
1 tbsp milk or cream (optional)
1 tsp butter or olive oil
1 ripe avocado, sliced
1 cup fresh broccoli florets
1 cup sliced mushrooms
Salt & freshly cracked black pepper to taste
Fresh chives or parsley for garnish
Instructions
Steam or boil the broccoli for 3-4 minutes until tender-crisp. Drain and set aside.
Heat a small drizzle of oil in a non-stick skillet over medium heat. Add the sliced mushrooms and season lightly with salt and pepper. Cook until golden brown.
In a mixing bowl, whisk together the eggs with milk/cream (if using), salt, and pepper. Melt butter in the skillet over low heat. Pour in the egg mixture and cook slowly while stirring gently until creamy and just set.
