  • 2 large eggs
  • 1 tbsp milk or cream (optional)
  • 1 tsp butter or olive oil
  • 1 ripe avocado, sliced
  • 1 cup fresh broccoli florets
  • 1 cup sliced mushrooms
  • Salt & freshly cracked black pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  1. Steam or boil the broccoli for 3-4 minutes until tender-crisp. Drain and set aside.
  2. Heat a small drizzle of oil in a non-stick skillet over medium heat. Add the sliced mushrooms and season lightly with salt and pepper. Cook until golden brown.
  3. In a mixing bowl, whisk together the eggs with milk/cream (if using), salt, and pepper. Melt butter in the skillet over low heat. Pour in the egg mixture and cook slowly while stirring gently until creamy and just set.
  4. Plate scrambled eggs alongside avocado slices, sautéed mushrooms, and broccoli. Garnish with chopped chives or parsley before serving.
