  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F and grease a medium-sized ceramic baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin slicer or sharp knife.
  3. In a large pot over medium heat, melt the butter and garlic until fragrant. Stir in the flour to create a roux and cook for 1–2 minutes.
  4. Gradually whisk in the heavy cream until thickened, about 5 minutes. Add Parmesan cheese, thyme, salt, and pepper, mixing until smooth.
  5. In a large bowl, combine the sliced potatoes with the sauce, then arrange them upright in the baking dish.
  6. Cover with foil and bake for 30 minutes; remove foil and bake uncovered for another 30 minutes until golden brown.
  7. Let cool for about 10 minutes before serving.
