  • 1 tablespoon olive oil
  • 1 large sweet potato (peeled and cubed)
  • 5 cloves garlic (minced)
  • 8 oz three-cheese tortellini
  • 4 oz fresh spinach
  • 6 cups water
  • 1/2 cup heavy cream
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add crumbled chicken sausage and cook until browned; drain excess fat.
  2. Stir in sweet potato, minced garlic, red pepper flakes, and tomato paste. Mix well.
  3. Pour in water and bring to a boil while stirring to dissolve the tomato paste completely.
  4. Reduce heat to simmer and cover; cook for about 15 minutes until sweet potatoes are tender.
  5. Add tortellini to the pot; cover and boil for about 10 minutes according to package instructions.
  6. Stir in fresh spinach until wilted; remove from heat and incorporate heavy cream.
  7. Season with salt and additional red pepper flakes as desired before serving.
