  • 2 large chicken breasts
  • 300g penne pasta
  • 500g baby potatoes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • Juice of lemon
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 200ml heavy cream
  • 50g grated Parmesan
  • 2 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Marinate chicken with olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
  2. Toss halved baby potatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper. Roast at 200C (400F) for 25-30 minutes until golden.
  3. Cook penne pasta in salted boiling water until al dente; drain.
  4. In a skillet, melt butter over medium heat. Sauté minced garlic and stir in heavy cream and grated Parmesan until smooth.
  5. Grill chicken on medium-high heat for about 5-6 minutes per side until cooked through; slice into strips.
  6. Combine cooked pasta with creamy sauce and parsley. Serve topped with grilled chicken and roasted potatoes.
