  • 12 oz rigatoni pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 tsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook rigatoni in salted boiling water until al dente (10-11 minutes), reserve some pasta water, then drain.
  2. Season chicken with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken for 7-8 minutes until golden and cooked through; add half of the garlic in the last minute.
  3. In the same skillet, melt remaining butter and sauté garlic until fragrant. Pour in heavy cream, simmering for about 2-3 minutes.
  4. Stir in mozzarella and Parmesan until melted and creamy. Add Italian seasoning and crushed red pepper flakes.
  5. Toss cooked rigatoni with sauce in the skillet, adjusting consistency with reserved pasta water if needed.
  6. Serve topped with seared chicken pieces and fresh parsley.
