Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 9 oz cheese tortellini
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • Grated Parmesan cheese (amount to taste)
  • Reserved pasta water (if needed)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions. Reserve ½ cup of pasta water before draining.
  2. Season chicken with Cajun seasoning, Italian seasoning, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden brown and cooked through (about 4-5 minutes per side). Transfer to a plate.
  4. In the same skillet, reduce heat and add butter and minced garlic. Sauté until fragrant.
  5. Pour in heavy cream, then add Velveeta cubes until melted. Stir in mozzarella and Parmesan cheese until smooth.
  6. Toss cooked tortellini into the sauce; add reserved pasta water as needed for consistency.
  7. Return chicken to the skillet, letting everything simmer for about 12 minutes.
  8. Garnish with parsley if desired and serve hot.
