  • 1/2 cup unsalted butter
  • 1 cup + 1 TBSP sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/4 cup fresh whole cranberries
  • 1/2 cup milk
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3.4 oz box instant pistachio pudding mix
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat oven to 350°F. Grease a 9×5" loaf pan.
  2. In a stand mixer, beat softened butter and sugar until fluffy. Add eggs and vanilla; mix well.
  3. In a food processor, chop cranberries with 1 TBSP sugar until roughly chopped; add to wet mixture.
  4. In a separate bowl, whisk together flour, baking powder, salt, and pudding mix.
  5. Gradually mix dry ingredients into the wet mixture, alternating with milk until just combined.
  6. Fold in chopped pistachios.
  7. Transfer batter to prepared pan and smooth the top. Bake for 55-65 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before moving to a cooling rack.
