  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tbsp ground coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • Juice of 1 lime

Instructions

  1. Prepare the ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a Dutch oven or slow cooker over medium heat, add vegetable oil and sauté the onion until translucent (about 5 minutes). Stir in garlic and ginger and cook until fragrant (about 1 minute).
  3. Add beef cubes to the pot and brown on all sides (approximately 5–7 minutes).
  4. Stir in red curry paste, ground coriander, turmeric, paprika, and optional cayenne pepper until beef is evenly coated.
  5. Incorporate coconut milk and beef broth along with lime juice.
  6. Cover and slow cook: If using a Dutch oven, reduce heat to low and simmer for at least 2 hours; if using a slow cooker, set on low for about 6–8 hours until beef is tender.
