  • 2.5 lbs beef chuck, cut into large chunks
  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • Salt & black pepper to taste

Instructions

  1. In a large heavy-bottomed pot, heat coconut oil over medium heat. Sauté the sliced onion for about 5 minutes until softened. Add minced garlic and grated ginger; cook for another minute until fragrant.
  2. Stir in red curry paste, cumin, cinnamon, turmeric, and optional chili flakes. Mix well.
  3. Increase heat to medium-high and add beef chunks. Sear on all sides until browned (about 5-7 minutes).
  4. Reduce heat to medium; pour in coconut milk and beef broth. Stir in brown sugar and season with salt and pepper.
  5. Cover the pot slightly ajar and simmer on low heat for 2-3 hours or until the beef is fork-tender.
  6. Adjust seasoning as needed before serving.
