  • 2 tablespoons freshly squeezed lime juice (plus more for salsa)
  • 2 tablespoons olive oil
  • 1/3 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 8 tortillas (yellow or white corn tortillas or flour tortillas)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • salt and pepper (to taste)
  • 1 sweet red bell pepper (diced)
  • 1/4 cup red onion (diced)
  • 3 green onions (diced)
  • 1/4 teaspoon chili powder (for salsa)
  • 1 tablespoon Sriracha
  • 1 lime (medium size, freshly squeezed)

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, smoked paprika, chili powder, salt, pepper, and chopped cilantro. Add chicken and marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook marinated chicken for about 5 minutes on each side until fully cooked. Let rest before slicing into strips.
  3. In another bowl, mix diced peaches, bell pepper, onion, green onions, cilantro, lime juice, chili powder, salt, and pepper to prepare the salsa.
  4. In a separate bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and cilantro for the crema.
  5. Warm tortillas briefly in the skillet. Assemble tacos with sliced chicken topped with peach salsa and drizzle with crema.
