  • 1 teaspoon vanilla
  • 1 large egg (room temperature)
  • 1¼ cups flour (163 grams) fluffed and leveled
  • â…“ cup unsweetened cocoa powder (30 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together room temperature butter and granulated sugar until light and fluffy. Add vanilla extract and egg; mix well.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine with the wet mixture until just mixed.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart. Bake for 10 minutes until edges are set but centers remain soft.
  5. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  6. For the mint frosting, beat together powdered icing sugar and butter until smooth; add milk and mint extract until creamy.
  7. Spread mint frosting over cooled cookies.
  8. For the ganache, melt semisweet chocolate chips with oil in a small saucepan over low heat; drizzle over frosted cookies.
