  • 6 large roasted green chiles
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 5 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a mixing bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper until smooth.
  3. Layer half of the roasted green chiles in the baking dish. Add half of each cheese type on top.
  4. Repeat with the remaining chiles and cheese.
  5. Pour the egg mixture evenly over the layers.
  6. Bake uncovered for 30–35 minutes until golden brown and set in the center.
  7. Let rest for 10 minutes before slicing and serving with garnishes.
