  • 1 1/2 pounds boneless chicken breasts or thighs, thinly sliced
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder or Tajin
  • 1 yellow onion, sliced
  • 3 bell peppers, sliced
  • 34 cups cooked rice
  • 3 cups grilled corn kernels
  • Fresh toppings (shredded lettuce, mashed avocado, jalapeños, cilantro)
  • 1/3 cup extra virgin olive oil (for vinaigrette)
  • 1/3 cup salsa verde
  • 1/4 cup lime juice
  • 2 teaspoons spicy honey
  • 1/3 cup cilantro, chopped

Instructions

  1. In a large skillet, heat olive oil over high heat. Add chicken and seasonings. Cook until seared and cooked through (about 8-10 minutes). Add garlic in the last 2 minutes.
  2. In the same skillet, sauté sliced onions until fragrant (about 5 minutes). Add bell peppers and cook until tender (another 5 minutes).
  3. Combine cooked chicken with the pepper mixture in the skillet.
  4. Prepare the vinaigrette by shaking olive oil, salsa verde, lime juice, spicy honey, and cilantro in a jar.
  5. Assemble bowls with rice as a base, topped with chicken-pepper mix, grilled corn, lettuce, and other toppings.
