  • 2 cups plus 3 tablespoons all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon kosher salt
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon

Instructions

  1. Brown the butter in a saucepan until golden and nutty; chill.
  2. Mix cooled butter with sugars until combined.
  3. Add pumpkin puree, egg yolk, molasses, and vanilla; blend well.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, spices, and salt.
  5. Combine dry ingredients into wet ingredients until just mixed; chill dough for 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll chilled dough in cinnamon sugar and place on sheets; bake for 9-10 minutes.
