Ingredients

Scale
  • 2 medium zucchinis
  • 4 cloves garlic, finely chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 4 tablespoons extra-virgin olive oil
  • 2 oz mozzarella cheese, shredded
  • 1 oz Parmesan cheese, finely shredded
  • 2 tablespoons fresh basil, torn

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice each zucchini in half lengthwise and score the flesh in a crosshatch pattern. Sprinkle with kosher salt and let sit for 15 minutes.
  3. In a skillet over medium heat, combine garlic and red pepper flakes with 2 tablespoons of olive oil; cook until fragrant (about 1-2 minutes) then set aside.
  4. Pat dry the zucchini halves, heat remaining olive oil in the skillet, and sear zucchini flesh-side down until golden brown (about 2-3 minutes). Transfer to a baking sheet.
  5. Brush each zucchini half with garlic oil, bake for 8-10 minutes until tender, then top with mozzarella and Parmesan.
  6. Broil for an additional 2-3 minutes until cheese is melted and bubbly. Garnish with fresh basil.
