  • 12 oz rigatoni pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Boil rigatoni in salted water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil and butter in a skillet over medium-high heat; cook chicken for 6-8 minutes until golden brown. Remove from skillet.
  4. In the same skillet, sauté minced garlic in butter for 1 minute.
  5. Add heavy cream and milk; bring to a simmer. Stir in Velveeta until melted, then add mozzarella and Parmesan until smooth.
  6. Toss cooked rigatoni into the sauce until well coated.
  7. Serve with seared chicken on the side and garnish with parsley if desired.
