  • 4 cups apples (peeled and chopped)
  • ½ cup light brown sugar
  • 1 tsp cinnamon
  • 2 cups vanilla wafer crumbs
  • ¼ cup melted butter
  • 1 pkg instant vanilla pudding mix (3.4 ounces)
  • 1 cup milk
  • ⅓ cup salted caramel sauce
  • 1 ½ cups heavy cream
  • Additional caramel sauce for garnish

Instructions

  1. In a medium saucepan, cook apples with brown sugar and cinnamon over medium heat until soft. Let cool.
  2. Mix vanilla wafer crumbs with melted butter until combined.
  3. Press mixture into the bottom of plastic dessert cups to form the crust.
  4. Whisk together pudding mix and milk in a large bowl; chill for 5 minutes. Stir in salted caramel sauce.
  5. Beat heavy cream until thick; fold into the pudding mixture until smooth.
  6. Pipe mousse over the crust in each cup.
  7. Top with cooked cinnamon apples and drizzle with additional caramel sauce.
  8. Chill before serving.
