  • 2 large eggs (lightly beaten)
  • 3 medium tart apples (peeled and finely chopped)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup all-purpose flour (for topping)
  • 1/2 cup quick-cooking oats
  • 1/3 cup caramel ice cream topping

Instructions

  1. Preheat your oven to 350°F and grease a 13×9 inch baking pan.
  2. For the shortbread crust: Mix together flour and brown sugar in a bowl; cut in cold butter until crumbly. Press evenly into the bottom of the prepared pan.
  3. For the cheesecake filling: Beat softened cream cheese until smooth; gradually add white sugar and vanilla while mixing. Incorporate eggs one at a time, then fold in chopped apples and spices.
  4. Pour the cheesecake mixture over the crust.
  5. For the topping: Combine flour, brown sugar, oats, and cubed butter until crumbly; sprinkle over cheesecake layer. Drizzle with caramel topping.
