  • 1.25 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning (plus extra to taste)
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 12 oz twisted pasta (like rotini or fusilli)
  • Chopped parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the twisted pasta until al dente according to package instructions. Drain and set aside, keeping about ½ cup of pasta water for later use.
  2. Season the chicken strips with Cajun seasoning, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-6 minutes until golden brown and cooked through. Transfer to a plate.
  3. In the same skillet, melt the butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Stir in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet.
  4. Lower the heat and add cream cheese, mozzarella, and Parmesan to the skillet. Stir until all cheeses melt into a smooth sauce. If it thickens too much, loosen it with a splash of reserved pasta water.
  5. Add the cooked pasta and sautéed chicken back to the skillet. Toss everything together until well-coated in the cheesy Cajun Alfredo sauce. Let it simmer for about 2 minutes so that all flavors meld beautifully.
  6. Sprinkle with fresh parsley before serving hot. For an extra indulgent touch, feel free to top with additional mozzarella cheese before serving!
