  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente (8-10 minutes). Reserve ½ cup pasta water before draining.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and butter; sear chicken for about 4-5 minutes on each side until golden brown.
  4. Remove chicken from the skillet. In the same pan, add minced garlic and sauté briefly before adding heavy cream and milk. Mix well.
  5. Stir in Velveeta until melted, then add mozzarella and Parmesan until thickened. Adjust consistency with reserved pasta water if necessary.
  6. Combine cooked rotini and seared chicken with the sauce. Serve hot.
