  • 2 pounds butternut squash
  • 2 Honeycrisp apples
  • Olive oil
  • Salt
  • Black pepper
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon dried sage
  • 1 1/2 teaspoons Herbes de Provence
  • 1/2 pound sweet Italian sausage (or turkey sausage)
  • 2 small fennel bulbs
  • 1 onion
  • 1 cup grated Gruyere cheese

Instructions

  1. Preheat oven to 425°F (220°C) and prepare a baking sheet.
  2. In a large bowl, combine cubed butternut squash and apples with olive oil, salt, black pepper, maple syrup, sage, and Herbes de Provence.
  3. Roast the mixture on the baking sheet for about 35 minutes until tender.
  4. Meanwhile, cook crumbled sausage in a skillet until browned; transfer to a bowl.
  5. Caramelize sliced fennel and onion in the same skillet until golden brown.
  6. Once vegetables are roasted, mix them with sausage and spoon into a medium baking dish.
  7. Top with Gruyere cheese and broil for a few minutes until melted and golden.
  8. Serve warm, garnished with fresh or fried sage leaves.
