  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs of fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt and cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange plums cut-side up on a lined baking tray. Drizzle with olive oil and honey if desired.
  3. Roast in the oven for 20-25 minutes until soft and caramelized.
  4. Allow plums to cool slightly before plating.
  5. Place burrata in the center of a serving plate and surround it with roasted plums.
  6. Top with chopped pistachios and thyme leaves, then drizzle with additional olive oil.
  7. Season with sea salt and cracked black pepper before serving immediately.
