  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 4 cloves garlic (minced)
  • 2 cups red apple vinegar
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then brown on all sides, about 3-4 minutes per side. Remove and set aside.
  3. In the same pot, sauté chopped onion, carrots, and celery until softened (5-7 minutes), then add minced garlic and cook for another minute.
  4. Stir in red apple vinegar to deglaze the pot, scraping up any browned bits. Add beef broth, tomato paste, dried thyme, and bay leaves; bring to a simmer.
  5. Return short ribs to the pot, cover with a lid, and braise in the preheated oven for about 3 hours or until tender.
  6. Remove ribs from the pot once done; strain the sauce if desired. Serve drizzled with sauce and garnished with fresh parsley.
