  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 2 chopped carrots
  • 2 chopped celery stalks
  • 4 minced garlic cloves
  • 1 tablespoon tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb stock
  • 2 sprigs rosemary
  • Salt and pepper

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Season lamb shanks with salt and pepper, then brown on all sides (about 5 minutes). Remove from the pot.
  3. In the same pot, sauté onion, carrots, celery, and garlic until softened (5-7 minutes). Stir in tomato paste.
  4. Deglaze the pot with apple vinegar, simmering for 2 minutes.
  5. Return lamb shanks to the pot along with stock and rosemary sprigs. Bring to a gentle simmer.
  6. Cover and transfer to the oven for about 2 hours, or until tender.
