  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 cups whole milk (for filling)
  • ½ cup granulated sugar (for filling)
  • 4 large egg yolks (for filling)
  • ¼ cup cornstarch (for filling)
  • 2 teaspoons vanilla extract (for filling)
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. Combine flour, sugar, yeast, and salt in a mixing bowl. In another bowl, whisk together warmed milk, eggs, melted butter, and optional lemon zest. Mix wet ingredients into dry until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm area for about 1 hour or until doubled.
  3. To make the pastry cream, heat whole milk and sugar in a saucepan until warm. Whisk egg yolks and cornstarch together in a separate bowl; slowly add the warm milk mixture while whisking continuously. Cook on low heat until thickened. Remove from heat and mix in vanilla extract and butter; cool completely.
  4. Roll out the risen dough to about ½ inch thick and cut into circles using a round cutter.
  5. Heat vegetable oil to 350°F (175°C) and fry dough circles until golden brown on both sides (about 2-3 minutes). Drain on paper towels.
  6. Fill each cooled bombolone with pastry cream using a piping bag by poking a hole in the side.
  7. Dust with powdered sugar before serving.
