  • 2 tablespoons butter
  • 2 minced garlic cloves
  • ½ medium onion, finely diced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 ounces softened cream cheese
  • ⅓ cup grated parmesan cheese
  • ⅓ cup roughly chopped pecans
  • ¼ cup finely chopped fresh parsley (plus extra for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms with a damp cloth and remove the stems, setting them aside.
  3. In a pan over medium heat, melt the butter and sauté the garlic and onion until fragrant.
  4. Chop the mushroom stems and add them to the pan, cooking for another few minutes.
  5. Remove from heat and mix in salt, pepper, cream cheese, parmesan cheese, chopped pecans, and parsley until well combined.
  6. Fill each mushroom cap with the mixture and place them on a lined baking sheet.
  7. Bake for about 20 minutes or until golden brown on top. Garnish with extra parsley before serving.
