  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup beef broth

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion, garlic, and ginger; sauté until onion is translucent.
  2. Stir in red curry paste, cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for another minute until fragrant.
  3. Add beef chunks to the pot and brown on all sides for about 5–7 minutes.
  4. Pour in coconut milk and beef broth; stir to combine and bring to a simmer.
  5. Reduce heat to low, cover, and simmer gently for about 2 hours or until beef is tender.
  6. Serve hot over rice or with flatbread.
