  • ½ cup BBQ sauce
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 avocado
  • ½ cup canned corn
  • ½ cup black beans
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • ¼ cup shredded cheese (cheddar or Monterey Jack)
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss diced sweet potatoes with 1 tablespoon olive oil, salt, black pepper, paprika, and garlic powder.
  3. Spread sweet potatoes on a baking sheet and roast for about 25 minutes until tender.
  4. Meanwhile, heat the remaining olive oil in a skillet over medium heat. Cook chicken breasts for 6–7 minutes per side until fully cooked; brush with BBQ sauce during the last few minutes.
  5. Slice the chicken and assemble bowls with roasted sweet potatoes, chicken, avocado, corn, black beans, red onion, cilantro, cheese, and green onions. Drizzle with extra BBQ sauce if desired.
