  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha
  • 2 tablespoons honey

Instructions

  1. In a mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey to make the sauce; set aside.
  2. Marinate chicken tenderloins in buttermilk for at least 10 minutes.
  3. Create a breading station with flour mixed with cornstarch and seasonings in one dish, beaten egg with Sriracha in another, and panko breadcrumbs in the third.
  4. Coat each tenderloin by dredging in the flour mixture, dipping in egg mixture, then rolling in panko.
  5. Heat canola oil over medium-high heat; fry tenderloins until golden brown (about 6 minutes), then drain on paper towels.
