  • 2 hard- or medium-boiled eggs
  • 1 ripe avocado
  • 1 medium sweet potato, peeled and cubed
  • 1 tsp olive oil
  • Salt and freshly cracked black pepper

  1. Preheat your oven to 200C (400F). Toss cubed sweet potatoes with olive oil, salt, and pepper in a bowl. Spread on a baking sheet and roast for 20-25 minutes until golden.
