  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 5 green onions
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • 1 teaspoon browning sauce
  • ¼ cup parsley leaves (loosely packed)
  • Cooked white rice (for serving)

Instructions

  1. Finely chop the onion, bell peppers, celery, green onions, and parsley. Mince the garlic and season the chicken with Cajun seasoning.
  2. Heat a large skillet over medium-high heat. Add avocado oil and sear the chicken thighs in batches for about 3-5 minutes per side until browned. Remove and set aside.
  3. In the same skillet, reduce heat to medium and melt butter. Whisk in flour; cook while stirring until it turns a medium brown color (about 10-15 minutes).
  4. Add chopped vegetables to the roux and sauté for about 10 minutes until softened. Stir in garlic and cook for an additional minute.
  5. Gradually whisk in warmed chicken broth, then add browning sauce. Return seared chicken to the skillet and let simmer on low heat for about 30 minutes.
  6. Remove chicken, chop into bite-sized pieces, stir back into the sauce along with parsley, and taste for seasoning adjustments.
  7. Serve hot over cooked white rice with remaining green onions on top.
