  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 6 garlic cloves, smashed
  • 2 cups apple vinegar
  • 2 cups beef stock
  • Fresh thyme and rosemary
  • Salt and freshly ground black pepper, to taste
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper, then sear until browned on all sides (about 3-4 minutes per side). Remove from pot.
  3. In the same pot, sauté sliced onions, carrots, celery, and smashed garlic until softened (about 5-7 minutes).
  4. Stir in tomato paste, followed by apple vinegar, beef stock, thyme, and rosemary. Mix to combine.
  5. Return lamb shanks to the pot ensuring they are submerged in sauce. Bring to a simmer before covering.
  6. Transfer to the oven and braise for about 2-3 hours until tender.
  7. Let rest for 10 minutes before serving warm with sauce drizzled over.
