  • 1 cup (130 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar for rolling
  • 1 teaspoon ground cinnamon for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, ground cinnamon, and salt until well combined.
  3. In a separate large bowl, beat together the unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  4. Add the large egg and vanilla extract to the butter-sugar mixture. Beat until everything is well combined.
  5. Gradually add the dry ingredient mixture into the wet ingredients. Mix until just combined; avoid overmixing.
  6. Gently fold in the finely chopped apple until evenly distributed throughout the dough.
  7. In a small bowl, mix together the additional granulated sugar and ground cinnamon for rolling.
  8. Roll tablespoon-sized portions of dough into balls. Then roll each ball in the prepared cinnamon sugar mixture until well coated.
  9. Place the dough balls on your prepared baking sheet, spacing them about 2 inches apart. Bake for 8–10 minutes or until edges are golden and centers are set.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
