  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it reaches about 1 cup. Let cool.
  2. In a bowl, mix cold cream cheese with granulated sugar and vanilla until smooth; refrigerate.
  3. Cream butter with brown and white sugars; add egg yolks and reduced apple cider.
  4. Combine flour with baking powder, baking soda, salt, and spices; mix into wet ingredients.
  5. Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets, create an indentation for filling, add cream cheese mixture, cover with dough.
  6. Bake for about 11 minutes or until lightly golden. Brush with melted butter and sprinkle with spiced sugar.
