  • 2 cups chopped apples (such as Honeycrisp or Gala)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8 x 5 inch loaf pan.
  2. In a small bowl, mix brown sugar and cinnamon; set aside.
  3. In a large mixing bowl, whisk together eggs and granulated sugar until combined. Stir in melted butter and vanilla extract.
  4. Add flour, baking powder, baking soda, and salt to the wet mixture; stir gently until just combined.
